1 pound boneless skinless chicken breast
2 tablespoons olive oil
2 tablespoons balsamic vinegar
1 tablespoon maple syrup
2 teaspoons Italian seasoning
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon smoked paprika
Kosher salt and pepper (to taste)
1 medium head of broccoli
Cooked rice
Chopped parsley for garnish
Instructions
Combine marinade ingredients: olive oil, balsamic vinegar, maple syrup, Italian seasoning, onion powder, garlic powder, smoked paprika, salt, and pepper in a bowl.
Cut chicken into bite-sized pieces and marinate for at least 15 minutes.
While chicken marinates, prepare broccoli by cutting into florets and tossing with olive oil, salt, and pepper.
Preheat air fryer to 380°F. Air fry chicken for 10-12 minutes until nearly cooked through.
Add broccoli to the air fryer basket with the chicken and continue cooking for an additional 6-8 minutes until both are fully cooked.
Serve over warm rice and garnish with fresh parsley.
