  • 4 chicken breasts (4 oz each)
  • Cooking spray
  • 1/2 cup grated parmesan cheese
  • 1 cup crushed beef rinds
  • 2 large eggs
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 1/2 cups keto-friendly marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • Fresh basil or parsley for garnish

Instructions

  1. In a bowl, mix crushed beef rinds, parmesan cheese, garlic powder, onion powder, salt, and pepper.
  2. Whisk one egg in another bowl for egg wash.
  3. Dip each chicken breast in the egg wash and then coat with the beef rind mixture.
  4. Lightly spray the air fryer basket with cooking spray and place the coated chicken inside.
  5. Cook at 380ºF for about 10 minutes; flip halfway through.
  6. Top each piece with marinara sauce and mozzarella cheese; cook for an additional 5-6 minutes until melted.
