  • 1/2 cup cane sugar or coconut sugar
  • 1 large beaten egg
  • 1/2 tablespoon unsweetened almond milk
  • 1 1/4 cups super fine almond flour
  • 3/4 cup cassava flour
  • 1/4 teaspoon xanthan gum
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon ground nutmeg

Instructions

  1. Cream softened butter and cane sugar in a bowl until smooth and fluffy. Add in the beaten egg and almond milk; mix well.
  2. In another bowl, whisk together almond flour, cassava flour, xanthan gum, salt, baking soda, and nutmeg.
  3. Gradually combine the dry ingredients with the wet mixture until a dough forms.
  4. Chill the dough wrapped in wax paper for at least three hours.
  5. Preheat your oven to 350°F (175°C). Roll out chilled dough to desired thickness and cut into shapes.
  6. Bake on a greased baking sheet for about 7-9 minutes until lightly golden on the bottom.
  7. Cool on a wire rack before decorating as desired.
