  • 2 tablespoons fresh dill, chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Wash the potatoes thoroughly; cut larger ones into uniform halves or quarters.
  2. Boil potatoes in salted water until fork-tender (15-20 minutes). Drain and let cool.
  3. Whisk together dressing ingredients: olive oil, lemon juice, apple cider vinegar, Dijon mustard, garlic; season with salt and pepper.
  4. In a large bowl, mix cooled potatoes with olives, feta cheese, parsley, and dill.
