  • 1 tablespoon butter
  • 4 cups chicken broth
  • 2 large apples (Fuji or similar)
  • 1 cup applesauce
  • ½ cup fat-free half and half
  • 1 teaspoon Cajun seasoning (or salt and pepper mix)
  • ½ teaspoon nutmeg
  • ¼ teaspoon ginger
  • ½ cup minced green onion (green part only)

Instructions

  1. Cut carrots into half-inch chunks and combine with butter and 1 cup chicken broth in a saucepan. Cover and cook on medium heat until tender, about 20 minutes.
  2. Add sliced apples and applesauce five minutes before removing from heat. Let cool for about 10 minutes.
  3. Transfer the mixture to a blender and puree until smooth. Return to the pot, stirring in remaining chicken broth, half and half, nutmeg, ginger, and seasoning.
  4. Heat gently on low until warmed through. Ladle into bowls, garnish with green onions or preferred toppings, and serve warm.
