  • ¼ cup light brown sugar

  • ¼ cup rolled oats

Instructions

  1. Preheat oven to 325°F (163°C). In a bowl, mix graham-cracker crumbs, granulated sugar, and melted butter until sandy in texture. Press into the bottom of a 9-inch springform pan and bake for 8–10 minutes until golden.
  2. For the filling, whisk cream cheese until smooth. Add brown sugar, then sour cream and vanilla extract. Mix in eggs one at a time.
  3. Pour filling over crust evenly. Toss sliced apples with light brown sugar and cinnamon; layer over the batter.
  4. Bake for 35–40 minutes until edges are set but center jiggles slightly.
  5. Cool in the oven with the door ajar for an hour before refrigerating for at least four hours or overnight.
  6. For the crumble topping, mix rolled oats with melted butter and brown sugar; spread over chilled cheesecake and bake at 375°F (190°C) for another 12–15 minutes.
