  • 350 g Lotus biscoff cookies
  • 150 g unsalted butter (melted)
  • 50 g all-purpose flour
  • 50 g brown sugar
  • 20 g rolled oats
  • 3 tart apples (peeled, cored, and sliced)
  • 50 g brown sugar
  • 1 teaspoon ground cinnamon
  • 2 teaspoons cornstarch
  • 690 g cream cheese (softened)
  • 75 g granulated sugar
  • 100 g Greek yogurt
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 3 large eggs (room temperature)

Instructions

  1. Preheat oven to 180°C (350°F). Crush biscoff cookies into fine crumbs and mix with melted butter. Press into the bottom of a springform pan.
  2. In a skillet, sauté sliced apples with brown sugar and cinnamon until softened. Sprinkle cornstarch over them and set aside.
  3. Beat cream cheese until smooth; add sugar, yogurt, vanilla, spices, and eggs one at a time until combined.
  4. Layer half the cheesecake mixture over the crust, then add sautéed apples. Top with remaining cheesecake mixture.
  5. Bake for about 85 minutes until set around the edges but slightly wobbly in the center.
  6. Prepare streusel topping by mixing flour, brown sugar, oats, and melted butter; sprinkle on top and bake for an additional 10-15 minutes.
  7. Let cool before chilling in the fridge for several hours or overnight.
