  • 1 1/2 teaspoons ground cinnamon

  • Pinch of fine kosher salt
  • 2 tablespoons melted coconut oil
  • 1 large egg (at room temperature)
  • 2 teaspoons vanilla extract
  • 2/3 cup agave syrup (or maple syrup)
  • 1 large apple (finely diced)
  • 12 tablespoons fresh lemon juice
  • 2 teaspoons lemon zest

Instructions

  1. Preheat your oven to 325ºF and line a baking sheet with parchment paper.
  2. In a bowl, mix together the oats, flour, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk the melted coconut oil, egg, vanilla extract, and agave syrup until smooth.
  4. Combine the dry ingredients with the wet mixture until just mixed.
  5. Fold in the diced apple along with lemon juice and zest.
  6. Chill the batter in the refrigerator for about 15 minutes.
  7. Scoop tablespoon-sized portions onto the prepared sheet pan.
  8. Bake for 12-15 minutes until edges are golden brown.
