  • 8 cups peeled and diced apples (about 6 apples)
  • 2 cups apple juice
  • 1 small lemon (zest and juice)
  • 1 tbsp apple cider vinegar
  • pinch of salt
  • 3 tbsp pectin
  • 1.5 tsp ground cinnamon
  • 0.5 tsp ground ginger
  • 0.5 tsp ground cardamom
  • 0.25 tsp ground cloves
  • 0.25 tsp ground nutmeg
  • 3 cups white granulated sugar

Instructions

  1. Combine diced apples, apple juice, lemon zest and juice, apple cider vinegar, and salt in a large pot. Bring to a boil over medium-high heat and simmer for about 10-12 minutes until apples are tender.
  2. Stir in spices and sprinkle pectin over the mixture while stirring gradually.
  3. Increase heat to reach a full rolling boil; add sugar all at once while continuously stirring for one more minute.
  4. Remove from heat and jar the hot jam for storage or canning.
