  • 1 lb fresh asparagus (cut into 1-inch pieces)
  • 3 cups cubed potatoes (½-inch sides)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tsp fresh thyme leaves
  • ½ tsp paprika
  • 1 cup sharp cheddar cheese (shredded)
  • Salt and pepper (to taste)
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil.
  2. In a skillet, cook diced turkey bacon until crispy, about 6-8 minutes. Drain on paper towels but reserve the fat.
  3. Sauté chopped onion in the same skillet for about 5 minutes; add minced garlic and cook for another minute.
  4. Season chicken breasts with salt and pepper; sear in olive oil for about 3 minutes per side.
  5. For the cream sauce, combine heavy cream and chicken broth in the skillet with thyme and paprika, simmering until slightly thickened.
  6. Layer half of the potatoes in the greased dish, followed by asparagus, half of the bacon, seared chicken, cream sauce, remaining potatoes, and bacon on top.
  7. Cover with cheese and bake covered for 25-30 minutes; uncover for an additional 15-20 minutes until golden brown.
  8. Let rest for five minutes before serving.
