  • 3 cups peeled and diced butternut squash
  • 1 small red onion (diced)
  • 12 ounces spicy Italian sausage (or chicken/turkey/plant-based sausage)
  • 2 cloves garlic (minced)
  • 1 bunch Swiss chard (thick stems removed, chopped)
  • 1 teaspoon red chili flakes
  • Salt to taste
  • Pepper to taste
  • 8 ounces rigatoni
  • 1/4 cup creme fraiche
  • 1/3 cup grated parmesan (plus extra for serving)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced red onion; sauté until translucent (3-4 minutes).
  2. Add spicy Italian sausage, breaking it up as it cooks until browned (5-7 minutes).
  3. Stir in butternut squash and minced garlic; cook until squash softens (about 5 minutes).
  4. Fold in chopped Swiss chard, red chili flakes, salt, and pepper; cook until wilted (2-3 minutes).
  5. Boil water in another pot; cook rigatoni according to package instructions until al dente.
  6. Drain rigatoni (reserve some pasta water). Combine with the skillet mixture along with creme fraiche and Parmesan cheese; stir well.
  7. Adjust creaminess with reserved pasta water if needed. Serve hot, topped with extra Parmesan if desired.
