  • 34 boneless skinless chicken breasts (about 1 lb)
  • 2 large fresh lemons (juiced)
  • 2 large eggs
  • 6 cups chicken broth
  • 1/2 cup uncooked rice
  • 1/4 cup fresh dill (chopped)

Instructions

  1. In a large pot, bring chicken broth to a gentle simmer over medium heat. Add chicken breasts and cook for 15-20 minutes until fully cooked. Remove chicken and shred into bite-sized pieces.
  2. Rinse rice under cold water until clear. After removing the chicken, add the rinsed rice to the simmering broth and cook according to package instructions (about 15 minutes).
  3. In a medium bowl, whisk together eggs and lemon juice until smooth. Gradually add 1 cup of hot broth while whisking to temper the eggs.
  4. Once the rice is cooked, return shredded chicken to the pot along with chopped dill. Slowly pour in the egg-lemon mixture while stirring.
  5. Taste and adjust seasoning if necessary. Let simmer for an additional 2 minutes before serving hot.
