  • 2 1/2 cups cooked sushi rice
  • 4 nori sheets
  • 12 ripe avocados (sliced)
  • 12 carrots (julienned)
  • 1 cucumber (julienned)
  • 1/4 cup fresh cilantro leaves
  • Optional: spicy mayo for drizzling

Instructions

  1. Cook the sushi rice according to package instructions and let it cool to room temperature.
  2. Julienne the carrots and cucumber, and slice the avocados.
  3. Lay a bamboo mat flat on your counter. Place parchment paper on top, then a nori sheet shiny side down.
  4. Spread approximately 1/2 cup + 2 tablespoons of sushi rice across the nori, leaving an inch at the top empty.
  5. Add sliced avocado, julienned carrots, cucumbers, and cilantro along the bottom edge of the nori.
  6. Tightly roll the nori away from you using both hands, tucking in the fillings as you go.
  7. Slice the roll into 1-inch thick pieces with a wet knife.
  8. Repeat until all ingredients are used.
