  • 1/2 cup fresh orange juice (or pineapple juice)
  • 1/2 cup maple syrup (or honey)
  • 2 tbsp coconut oil (melted)
  • ½ tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • Kosher salt and ground pepper (to taste)
  • ½ cup chopped pecans

Instructions

  1. Preheat the oven to 350°F. Lightly grease a medium oven-safe dish with melted coconut oil.
  2. Place the sliced sweet potatoes in the prepared dish and season with kosher salt and ground pepper.
  3. In a separate bowl, whisk together fresh juice, maple syrup, melted coconut oil, cinnamon, and nutmeg until well combined.
  4. Pour the mixture over the sweet potatoes and toss gently to ensure each slice is coated.
  5. Cover the dish with aluminum foil and bake for about 45–50 minutes, tossing halfway through for even cooking.
