  • 2 pints cherry or grape tomatoes
  • 2 tablespoons extra virgin olive oil
  • 34 cloves garlic (chopped or pressed)
  • 1 teaspoon Italian seasoning
  • Kosher salt and freshly ground black pepper (to taste)
  • 8 ounces block feta cheese
  • 1 pound medium-sized raw shrimp (peeled and deveined)
  • 8 ounces pasta (GF if needed, whole grain, or lentil pasta)
  • 2 cups packed baby spinach (roughly chopped or a handful of basil)
  • Juice and zest of 1 lemon
  • Chopped parsley or basil (to garnish)

Instructions

  1. Preheat your oven to 400°F.
  2. In a baking dish, combine tomatoes, olive oil, garlic, Italian seasoning, salt, and pepper.
  3. Create space for the block of feta in the center and coat it with the tomato mixture.
  4. Bake for 30-35 minutes until tomatoes are roasted and feta is melted.
  5. Stir in shrimp and bake an additional 6-8 minutes until shrimp is pink.
  6. Cook pasta according to package instructions; reserve some pasta water.
  7. Mix cooked pasta with baked mixture, spinach, lemon juice, and reserved water.
  8. Serve garnished with fresh herbs.
