  • 2 medium sweet potatoes, peeled and chopped
  • 1 large yellow onion, chopped
  • 1 Tablespoon olive oil
  • 1/4 teaspoon salt (divided)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chipotle or chili powder
  • 1 medium head broccoli, chopped into florets
  • 1 pound boneless skinless chicken breasts
  • 1/2 cup BBQ sauce (divided)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a lined sheet pan, toss sweet potatoes and onion with olive oil, 1/4 teaspoon salt, garlic powder, and chipotle powder. Roast for about 20 minutes.
