  • 1 pound boneless skinless chicken breast
  • 1 cup low sugar BBQ sauce
  • 1 cup uncooked quinoa
  • 2 cups water
  • 1 (15 ounce) can black beans, rinsed and drained
  • 2 cups shredded red cabbage
  • 1 cup sweet corn (fresh or frozen)
  • ¼ cup finely diced red onion
  • 2 roma tomatoes, diced
  • 1 jalapeño, thinly sliced (optional)
  • 1 avocado, diced or sliced
  • Greek yogurt ranch dressing (or ranch of choice)
  • Fresh cilantro and scallions for garnish

Instructions

  1. Cook the Chicken: Place the chicken breasts in a slow cooker and pour the BBQ sauce over them. Cook on high for 2.5 to 3 hours until tender. Alternatively, marinate and grill the chicken for added flavor.
  2. Prepare the Quinoa: Rinse quinoa under cold water. In a pot, combine quinoa and water. Bring to a boil, then reduce heat to low and simmer for about 15 minutes until the water is absorbed.
  3. Assemble Your Bowls: In each bowl, layer approximately ¾ cup of quinoa followed by shredded chicken, black beans, red cabbage, corn, onion, tomatoes, jalapeños (if using), and avocado. Drizzle with ranch dressing and garnish with cilantro and scallions.
