  • 8 oz lo mein noodles
  • 8 oz beef flank steak, thinly sliced
  • 1 cup bell peppers, sliced
  • 1 cup bok choy, chopped
  • 1 medium carrot, julienned
  • 3 cloves garlic, minced
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp oyster sauce
  • 1 tsp cornstarch mixed with 1 tbsp water
  • 2 tbsp vegetable oil

Instructions

  1. Prepare all ingredients by slicing the beef and vegetables.
  2. Cook lo mein noodles according to package instructions; drain and set aside.
  3. In a skillet over medium-high heat, add 1 tablespoon of oil and stir-fry the beef until browned (about 3-4 minutes). Remove from skillet.
  4. In the same skillet, add remaining oil and sauté garlic for about 30 seconds before adding vegetables. Stir-fry for about 5 minutes until tender yet crisp.
  5. Return beef to the skillet with cooked noodles. Pour in soy sauce and oyster sauce mixture combined with cornstarch. Stir until evenly coated and heated through.
  6. Serve hot, garnished with green onions if desired.
