  • 2 large boneless skinless chicken breasts
  • ¼ cup cornstarch (or flour)
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons extra-virgin olive oil
  • 3 tablespoons unsalted butter
  • 8 ounces baby bella or cremini mushrooms (thinly sliced)
  • ¼ cup finely chopped shallot
  • 4 garlic cloves (minced)
  • 1 cup chicken broth
  • ¾ cup Marsala apple vinegar
  • ½ cup heavy cream
  • Fresh parsley for garnish

Instructions

  1. Slice the chicken breasts in half lengthwise to create four thinner cutlets.
  2. In a shallow dish, mix cornstarch, salt, and pepper. Dredge each cutlet in the mixture until fully coated.
  3. Heat olive oil and butter in a skillet over medium-high heat. Sear the chicken for about 3 to 4 minutes on each side until golden brown. Remove from pan.
  4. In the same skillet, melt additional butter and add mushrooms; sauté for 2 to 3 minutes until lightly browned. Add garlic and shallots; cook briefly until fragrant.
  5. Pour in chicken broth, Marsala apple vinegar, and heavy cream to deglaze the pan. Simmer until thickened (10 to 15 minutes).
  6. Return chicken to the skillet, spoon sauce over it, and simmer for another 2 to 3 minutes before serving with fresh parsley.
