  • 2 tablespoons olive oil
  • 1 cup breadcrumbs
  • 1/2 cup fresh spinach, chopped
  • 1/4 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1/4 cup red onion, finely diced
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh rosemary, chopped
  • Salt and pepper to taste
  • 1/4 cup beef broth
  • 1 tablespoon butter

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season the beef tenderloin generously with salt and pepper.
  3. In a skillet over medium heat, heat olive oil. Sauté garlic and red onion until softened (2-3 minutes).
  4. Add spinach; cook until wilted (about 2 minutes). Remove from heat.
  5. Stir in breadcrumbs, Parmesan cheese, thyme, and rosemary.
  6. Butterfly the tenderloin by slicing down the center but not all the way through.
  7. Stuff with breadcrumb mixture; tie securely with kitchen twine.
  8. Sear each side of the tenderloin in an ovenproof skillet for about 3-4 minutes per side.
  9. Add beef broth and butter; roast for about 30-40 minutes until desired doneness is reached.
  10. Let rest for 10 minutes before slicing.
