  • 1/2 cup chicken or vegetable stock
  • 12-ounce jar roasted red peppers (drained)
  • 8 leaves fresh basil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon red pepper flakes (plus more to taste)
  • 1/2 cup freshly grated parmesan cheese (plus more for serving)

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a blender, combine roasted red peppers, heavy cream, chicken or vegetable stock, fresh basil, sea salt, and red pepper flakes. Blend until smooth.
  3. In a large skillet over medium heat, pour in the blended sauce and simmer for about 5 minutes.
  4. Add the cooked pasta to the skillet and toss to coat evenly in the sauce. Stir in grated parmesan cheese until melted.
