  • 1.5 pounds boneless skinless chicken breasts
  • 1 small onion, diced
  • 2 large garlic cloves, minced
  • 1 tablespoon oil
  • 3 cups low sodium chicken broth
  • 2 (15 ounces) cans great Northern beans or cannellini beans, drained and rinsed
  • 2 cups corn
  • 4 ounces diced green chilies
  • 1 teaspoon ground cumin
  • 1/2 teaspoon oregano
  • 1/2 teaspoon chili powder
  • 1/8 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 small bunch cilantro, finely chopped
  • 1/2 cup plain or Greek yogurt
  • Juice of 1 lime
  • Tortilla chips, avocado, more yogurt, limes for serving

Instructions

  1. In a large pot over medium-high heat, add oil and sauté diced onion and minced garlic for about 3 minutes until fragrant.
  2. Stir in spices (cumin, oregano, chili powder, cayenne pepper, salt, black pepper) and toast for 30 seconds.
  3. Mash 1 cup of beans in a bowl; add to the pot along with remaining whole beans, chicken broth, corn, green chilies, and chicken breasts. Bring to a boil then reduce heat and simmer for 20 minutes.
  4. Remove chicken breasts to shred using two forks before returning it to the pot along with lime juice and cilantro.
  5. Stir well and serve hot with desired toppings.
