  • 1 cup raw cashews
  • 1 cup raw almonds
  • 2 tbsp whole flaxseeds
  • 2 tbsp chia seeds
  • 1/2 cup unsweetened coconut flakes
  • 2/3 cup pure maple syrup
  • 3 tbsp coconut oil
  • 1/4 cup salted almond butter
  • 2 tsp vanilla extract
  • Pinch of sea salt

Instructions

  1. Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine buckwheat groats, cashews, almonds, flaxseeds, chia seeds, and coconut flakes.
  3. In a small saucepan over medium heat, mix maple syrup, coconut oil, almond butter, and vanilla extract until melted and smooth.
  4. Pour the mixture over the dry ingredients and stir to coat evenly. Add a pinch of sea salt for flavor.
  5. Spread the mixture onto the prepared baking sheet and press down lightly to form clusters. Bake for about 20 minutes; stir gently and bake for an additional 18-20 minutes until golden brown.
  6. Allow cooling completely before breaking into clusters. Store in an airtight container at room temperature.
