  • 2 tablespoons olive oil
  • 1/2 lb chicken sausage, crumbled
  • 1 small onion, finely chopped
  • 1/4 cup bell pepper, chopped
  • 4 large eggs
  • Salt and pepper, to taste
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1/4 cup salsa (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add diced potatoes and cook until crispy and golden brown, about 10 minutes. Remove from skillet.
  2. In the same skillet, add crumbled chicken sausage and cook until browned, about 5-7 minutes. Stir in chopped onion and bell pepper; sauté for another 3-4 minutes.
  3. Crack eggs into the skillet; scramble with the sausage mixture until fully cooked (3-5 minutes). Season with salt and pepper.
  4. Warm tortillas in a dry skillet for about 1 minute per side until pliable.
  5. Assemble each burrito by adding the filling mixture to the warmed tortilla, topping with crispy potatoes and shredded cheese. Roll tightly.
  6. Serve immediately with optional salsa on top.
