  • 8 ounces whole-wheat pasta
  • 1 large head of broccoli (about 1 pound)
  • 2 tablespoons olive oil
  • 1 small white onion
  • 8 ounces cremini mushrooms
  • 4 cloves garlic (minced)
  • 2 tablespoons cornstarch
  • 1½ cups milk of choice
  • 1 cup chicken or vegetable stock
  • 1 tablespoon Dijon mustard
  • 2 cups diced cooked chicken breast
  • 1½ cups shredded cheddar cheese (divided)

Instructions

  1. Preheat oven to 400°F (200°C). Cook whole-wheat pasta according to package directions, adding broccoli florets during the last minute of cooking.
  2. While pasta cooks, chop onion and mushrooms. In a pan over medium-high heat, sauté onions in olive oil until translucent. Then add mushrooms and garlic; cook until golden brown.
  3. In a bowl, whisk cornstarch with a bit of milk. Pour in remaining milk and stock into the pan with sautéed veggies. Add Dijon mustard; mix well until bubbly.
  4. Stir in the cornstarch mixture and cook until thickened. Remove from heat and stir in one cup of cheddar cheese.
  5. In a baking dish, combine cooked pasta, broccoli, chicken, and sauce. Stir to coat evenly, then top with remaining cheese.
  6. Bake for about 15 minutes until golden brown and bubbly.
