  • 2 ⅔ cups all-purpose flour
  • 3/4 teaspoon fine sea salt
  • 1/2 cup cold water
  • 1 tbsp apple cider vinegar
  • 3 cups fresh sliced peaches
  • 3 cups fresh strawberries (hulled and quartered)
  • ¼ cup granulated sugar
  • ¼ cup cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • ¼ teaspoon fine sea salt
  • 23 tablespoons Turbinado sugar (optional)

Instructions

  1. Prepare the brown butter crust by melting the butter in a saucepan over medium heat until golden brown and nutty. Allow it to cool slightly.
  2. In a mixing bowl, combine cooled brown butter with flour and salt. Gradually add cold water while mixing until crumbly. Knead gently into a dough, divide into two disks, wrap in plastic, and refrigerate for one hour.
  3. While the dough chills, prepare the filling by combining sliced peaches, strawberries, sugar, cornstarch, lemon juice, lemon zest, and salt in a large bowl.
  4. Roll out one disk of dough and place it in a pie pan. Fill with fruit mixture and cover with the second rolled-out disk; cut slits for ventilation.
  5. Brush the top crust with whisked egg and sprinkle with Turbinado sugar if desired. Bake at 425°F (220°C) for 20 minutes; reduce heat to 350°F (175°C) for an additional 50 minutes until bubbly and golden.
  6. Allow cooling before slicing; serve warm.
