  • 1 cup buffalo sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 cups cooked rice (white, brown, or cauliflower rice)
  • 1 cup shredded cheddar cheese
  • 1 cup chopped celery
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/2 cup ranch dressing or blue cheese dressing

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix chicken breasts with olive oil, garlic powder, onion powder, salt, and pepper.
  3. Coat chicken with half of the buffalo sauce.
  4. Bake on parchment-lined baking sheet for 20-25 minutes until cooked through (165°F internal temperature).
  5. Shred the chicken and toss with remaining buffalo sauce.
  6. Cook rice according to package instructions or sauté cauliflower rice until tender.
  7. Assemble by placing rice in bowls and topping with shredded chicken.
  8. Add chopped celery, cherry tomatoes, sliced avocado, and drizzle with dressing.
