  • 34 garlic cloves (chopped or pressed)
  • 1 lb ground chicken
  • 1/2 cup buffalo sauce
  • 2/3 cup shredded Mexican blend cheese
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F.
  2. Halve the zucchinis lengthwise and scoop out the insides, leaving a quarter-inch rim.
  3. Place the zucchini halves cut side up on a parchment-lined baking tray. Season with salt, pepper, and a light spray of avocado oil. Bake for about 10 minutes.
  4. In a skillet over medium-high heat, warm olive oil and sauté minced garlic for one minute. Add ground chicken, seasoning with salt and pepper, cooking until fully done (about 6-7 minutes).
  5. Stir in reserved zucchini insides and buffalo sauce; cook for an additional couple of minutes.
  6. Stuff the baked zucchini with the buffalo chicken mixture, top with cheese, and bake for another 15 minutes until cheese is melted and golden brown.
