  • 3/4 cup warm milk
  • 2 1/4 teaspoons instant yeast
  • 2 large eggs
  • 1/2 cup salted butter (melted)
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup granulated sugar
  • 1 1/2 cups finely shredded carrot
  • 3/4 cup shredded coconut
  • 4 1/2 cups bread flour (divided)
  • 3/4 cup salted butter (almost melted) for filling
  • 1 1/2 cups packed brown sugar for filling
  • 3 tablespoons cinnamon for filling
  • 6 ounces cream cheese (softened) for frosting
  • 2 cups powdered sugar for frosting

Instructions

  1. In a stand mixer bowl, combine warm milk and sprinkle yeast on top. Let it activate.
  2. Add eggs, melted butter, salt, cinnamon, and sugar to the mixture, followed by carrots and coconut.
  3. Gradually mix in four cups of bread flour until just combined; let rest for five minutes.
  4. Knead using the dough hook, adding more flour until the dough is smooth and elastic.
  5. Place the dough in a greased bowl to rise until doubled in size (about 30 minutes).
  6. Meanwhile, prepare the filling by mixing softened butter, brown sugar, and cinnamon.
  7. Roll out the risen dough into a rectangle and evenly spread the filling over it.
  8. Roll up tightly from one edge and slice into pieces; place them in a greased pan to rise again briefly.
  9. Preheat oven to 350°F (175°C) and bake rolls for about 27–30 minutes until golden brown.
  10. While baking, prepare frosting by mixing softened cream cheese with powdered sugar and vanilla until smooth.
  11. Frost cooled rolls generously before serving.
