  • 2 chamomile tea bags
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon kosher salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup unsalted butter, softened for frosting
  • ¼ cup honey for frosting
  • 3 ½ cups powdered sugar for frosting
  • 2 tablespoons cold heavy cream for frosting
  • Chamomile flowers for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line a standard cupcake pan with liners.
  2. Steep chamomile tea bags in hot water for about 10 minutes; set aside.
  3. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In another bowl, cream butter and sugar until fluffy (3-5 mins). Add eggs one at a time and mix in vanilla.
  5. Gradually combine dry ingredients with steeped tea until just mixed.
  6. Fill liners two-thirds full and bake for 12-16 minutes until a toothpick comes out clean.
  7. Cool completely before frosting: beat butter and honey until smooth; gradually add powdered sugar and cream until fluffy.
  8. Pipe frosting onto cooled cupcakes and garnish with chamomile flowers.
