Ingredients

Scale
  • 12 oz refrigerated cheese tortellini
  • 1 lb thinly sliced beef (ribeye or sirloin)
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 8 oz provolone cheese, shredded
  • 1 ½ cups milk
  • 1 cup beef broth
  • 2 tablespoons all-purpose flour

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Add sliced beef and cook until browned. Then add green and red bell peppers and onion; sauté until tender (5–7 minutes). Stir in minced garlic.
  2. Sprinkle flour over the mixture and stir well. Gradually pour in milk and beef broth while stirring to avoid lumps. Bring to a gentle simmer until thickened.
  3. Remove from heat and add shredded provolone cheese; stir until melted and creamy.
  4. Gently fold in cooked tortellini until well-coated.
  5. Serve hot, garnished with fresh parsley if desired.
