  • 2 lbs boneless skinless chicken thighs
  • 6 ounces sliced mushrooms
  • 4 cups spinach (raw)
  • 2 tbsp unsalted butter
  • 3 tsp minced garlic
  • 1 1/2 cups heavy whipping cream
  • 1/2 cup pumpkin puree
  • 1/2 cup grated parmesan cheese

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add chicken thighs and sauté until nearly cooked through, approximately 5-7 minutes.
  3. Stir in sliced mushrooms and cook until tender and chicken is fully cooked.
  4. Add fresh spinach and sauté until wilted.
  5. Remove from heat and set aside.
  6. In the same skillet, reduce heat to medium, add butter and minced garlic; sauté for 30 seconds.
  7. Pour in heavy whipping cream and pumpkin puree; whisk until combined and slightly thickened.
  8. Stir in grated parmesan cheese until melted into the sauce.
  9. Return chicken and vegetables to the skillet; toss gently to coat with the sauce.
