  • 2 garlic cloves
  • 1 tbsp avocado oil
  • 1/2 tsp no-salt seasoning mix
  • 1/2 tsp thyme
  • 1/2 tsp garlic powder
  • Salt (to taste)
  • 1 cup carrots
  • 1 cup celery
  • 2 cups vegetable broth
  • 2 cups water
  • 2 chicken breasts
  • 3/4 cup corn
  • 1 cup cooked wild rice

Instructions

  1. Chop the onion, garlic, carrots, and celery.
  2. Heat avocado oil in a large pot over medium heat; sauté onion and garlic with seasonings until fragrant.
  3. Add carrots and celery; cook until tender.
  4. In another pot, cook wild rice according to package instructions.
  5. Pour vegetable broth and water into the pot with sautéed veggies; add chicken breasts and bring to a boil.
  6. Reduce heat and simmer for about 12 minutes until chicken is cooked through.
  7. Remove chicken, shred it, then return it to the pot.
  8. Stir in corn and blend a portion of the soup for creaminess; mix back in the shredded chicken and wild rice.
  9. Adjust seasoning as needed; simmer for an additional few minutes before serving.
