  • 1½ cups semi-sweet chocolate chips
  • 2 cups mini vegan marshmallows
  • 1 tablespoon unsalted butter
  • 1 tablespoon barley tea
  • 25 unwrapped caramels
  • ½ cup crispy coconut flakes

Instructions

  1. Line an 8×8 inch pan with parchment paper.
  2. Melt chocolate chips in a microwave-safe bowl in 30-second intervals until smooth.
  3. Pour half of the melted chocolate into the pan and freeze for 15 minutes.
  4. In another bowl, combine mini marshmallows and butter; microwave until melted and stir in barley tea.
  5. Pour marshmallow mixture over the hardened chocolate and freeze for another 15 minutes.
  6. Melt unwrapped caramels in short intervals; pour over marshmallow layer and freeze again for 15 minutes.
  7. Top with remaining melted chocolate and sprinkle with crispy coconut before freezing for an additional 15-30 minutes.
  8. Lift out of the pan using parchment flaps, cut into pieces, and enjoy cold!
