  • 6 tablespoons unsalted butter, melted
  • 1 1/2 cups buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup semisweet chocolate chips
  • 1/4 cup all-purpose flour (for streusel)
  • 2 tablespoons brown sugar (for streusel)
  • 1/2 cup toffee bits
  • 1 tablespoon butter, at room temperature (for streusel)

Instructions

  1. Preheat your oven to 375°F and line a muffin tin with paper cups.
  2. In a bowl, mix flour, brown sugar, cocoa powder, espresso powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together melted butter, buttermilk, eggs, and vanilla extract.
  4. Combine wet and dry ingredients until just mixed; fold in chocolate chips.
  5. Prepare the streusel by mixing flour, brown sugar, toffee bits, and room temperature butter until crumbly.
  6. Fill muffin cups three-quarters full with batter and top with streusel.
  7. Bake for about 20 minutes or until a toothpick comes out clean.
  8. Cool slightly before transferring to a wire rack.
