  • 2 tbsp cocoa powder
  • 1/4 cup peanut butter (divided)
  • 2 tbsp honey
  • 1/4 cup refined coconut oil
  • 1 tsp vanilla extract
  • 2 tbsp dairy-free chocolate chips

  2. In a small pot over low heat, melt together 2 tablespoons of peanut butter, honey, refined coconut oil, and vanilla extract until smooth.
  3. In a large bowl, combine oats, peanuts, and cocoa powder; pour the melted mixture over the dry ingredients and stir well.
  4. Spread the mixture evenly on a parchment-lined baking tray.
  5. Bake for 10 minutes; then drizzle remaining peanut butter and sprinkle chocolate chips on top before returning to the oven for an additional 10 minutes.
