  • 1 cup granulated sugar (divided)

  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1 cup melted dark chocolate, cooled
  • 1 cup fresh strawberries, pureed
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Combine cookie crumbs, melted butter, and sugar in a bowl; press into a springform pan.
  2. Bake the crust for 10 minutes and let cool.
  3. Beat cream cheese until smooth; gradually add sugar. Mix in eggs one at a time, then add vanilla extract and sour cream. Fold in cooled melted chocolate.
  4. For the strawberry swirl, blend pureed strawberries with remaining sugar and lemon juice.
  5. Pour chocolate filling over crust; spoon dollops of strawberry puree on top and swirl gently.
  6. Bake for 50-60 minutes until edges are set; cool in the oven with the door ajar for one hour.
  7. Chill in the refrigerator for at least four hours or overnight before serving.
