  • 1 cup reserved pasta water

Instructions

  2. Prepare the Bacon: In a large skillet over medium heat, cook chopped turkey bacon until crispy. Remove from heat, leaving rendered fat in the pan.
  3. Create the Sauce: In a bowl, whisk together eggs, Parmesan cheese, garlic (if using), and black pepper until smooth.
  4. Combine Everything: Quickly add drained pasta to the skillet with bacon fat. Off heat, pour in the egg mixture while tossing vigorously. Use reserved pasta water as needed to achieve a creamy consistency.
