  • 2 cups sugar
  • 3/4 cup pumpkin puree
  • 1/2 cup butter
  • 2 1/2 tsp pure vanilla extract

  • 1 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. In a mixer, beat together sugar, butter, and vanilla until creamy.
  3. Add pumpkin puree and eggs one at a time, mixing until combined.
  4. In a separate bowl, whisk flour, baking powder, and salt together.
  5. Gradually combine the dry ingredients with the wet mixture at low speed until just blended.
  6. In another bowl, mix remaining sugar and cinnamon.
  7. Toss chopped apples in about 2 tablespoons of the cinnamon sugar.
  8. Fold three cups of apples into the batter, reserving one cup for topping.
  9. Pour batter into a greased springform pan; top with remaining apples and sprinkle with cinnamon sugar.
  10. Bake for about an hour or until golden brown on top.
  11. Cool on a wire rack before serving.
