  • 4 bone-in chicken thighs (skin-on)
  • 2 medium carrots (chopped)
  • 2 celery stalks (chopped)
  • 1 large yellow onion (chopped)
  • 3 garlic cloves (minced)
  • 4 cups low-sodium chicken stock
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Chop the carrots, celery, onion, and mince the garlic.
  2. In a large pot over medium heat, add olive oil and brown the chicken thighs skin-side down for about 5 minutes; flip and cook for an additional 3 minutes before removing from the pot.
  3. In the same pot, sauté onions, carrots, and celery for about 5 minutes until softened. Add minced garlic during the last minute.
  4. Pour in chicken stock and stir in dried thyme; scrape up any brown bits from the bottom of the pot.
  5. Return browned chicken thighs to the pot, bring to a boil, then reduce heat and simmer gently for about an hour until the chicken is tender.
  6. Serve hot, garnished with fresh parsley if desired.
