  • 12 oz (340g) cheese tortellini
  • 6 slices turkey bacon, chopped
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 1/4 teaspoon crushed red pepper flakes
  • 1 cup (240ml) heavy cream
  • 1/2 cup (50g) grated Parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • 2 cups (100g) fresh spinach, roughly chopped
  • 2 cups (200g) broccoli florets, charred

Instructions

  1. Cook the tortellini in salted boiling water according to package instructions. Reserve 1/2 cup of the pasta water before draining.
  2. In a large skillet over medium heat, add the chopped turkey bacon. Cook until crispy, then remove with a slotted spoon and set aside while leaving the rendered fat in the skillet.
  3. Add olive oil, garlic, and crushed red pepper flakes to the skillet. Sauté for about 1-2 minutes until fragrant.
  4. Pour in heavy cream, grated Parmesan cheese, Italian seasoning, salt, and pepper. Let simmer for 3-5 minutes until slightly thickened.
  5. Stir in spinach and cooked tortellini until well coated; use reserved pasta water as needed to adjust sauce consistency.
  6. Return the crispy turkey bacon to the skillet and stir until evenly mixed.
  7. Serve hot with fresh parsley and extra Parmesan on top.
