  • 3/4 cup olive oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon minced shallots
  • 1/4 cup loosely packed fresh parsley
  • 4 slices pineapple
  • 1 avocado, sliced
  • 1 corn on the cob
  • 1/2 cup pepitas
  • 1 cup fresh blueberries
  • 23 cups fresh mixed greens

Instructions

  1. Prepare the dressing by blending orange juice, lemon juice, almond milk, olive oil, rice vinegar, shallots, parsley, and salt until smooth.
  2. Preheat your grill to medium-high heat. Brush pineapple slices with olive oil and grill for 2 minutes on each side until caramelized.
