  • Kosher salt and ground pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon ground coriander seed
  • 1 tablespoon coconut sugar
  • 2 tablespoons gluten-free flour
  • 1/4 cup chopped cilantro
  • 2 tablespoons coconut oil
  • 1 cup coconut milk
  • Juice of 2 limes
  • 2/3 cup chicken broth
  • Green onions for garnish

Instructions

  1. Season chicken breasts with salt, pepper, garlic powder, ground coriander, and coconut sugar on both sides.
  2. In a large skillet over medium heat, heat coconut oil and sear the chicken for 4-5 minutes on each side until lightly browned. Remove and set aside.
