  • 400 g Italian sausage (chicken or turkey), casings removed and cut into chunks
  • 1 medium onion, finely diced
  • 1 medium carrot, diced
  • 2 celery sticks, diced
  • 2 large garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon red chili flakes
  • 75 ml dry white grape juice
  • 1 litre chicken stock
  • 150 ml double cream
  • 500 g gnocchi
  • 1 handful baby spinach
  • 30 g freshly grated Parmesan

Instructions

  1. Heat olive oil in a heavy-bottomed pot over medium-high heat. Add Italian sausage chunks and cook until browned, about 4-5 minutes, crumbling as you go.
  2. Stir in diced onion, carrot, and celery; cook for 2-3 minutes until softened. Then add minced garlic, Italian seasoning, and red chili flakes; cook for another minute.
  3. Pour in dry white grape juice, cooking briefly to deglaze the pot. Add chicken stock, bring to a boil, then let it simmer for 10 minutes.
  4. Stir in double cream followed by gnocchi; cook according to package instructions (2-3 minutes).
  5. Finally, add baby spinach and grated Parmesan cheese. Season to taste before serving.
