Ingredients

Scale
  • 2 large chicken breasts (about 8 oz each, halved lengthwise)
  • 1/2 tablespoon lemon pepper seasoning
  • Kosher salt and ground black pepper (to taste)
  • 2 tablespoons olive oil
  • 23 cloves garlic (minced)
  • 1 tablespoon gluten-free flour
  • 1 cup almond or cashew milk
  • Optional garnishes: lemon slices, chopped parsley

Instructions

  1. 1. Season the chicken breasts with lemon pepper, kosher salt, and black pepper on both sides.
  2. 2. Heat 1 tablespoon of olive oil in a large non-stick pan over medium-high heat. Cook the chicken until golden brown, about 8-10 minutes total. Remove from the pan and keep warm.
  3. 3. In the same pan, add the remaining olive oil and sauté minced garlic for one minute until fragrant.
  4. 4. Whisk together gluten-free flour and almond or cashew milk in a small bowl until smooth. Pour into the pan with garlic, whisking continuously until bubbly and thickened (about 2-4 minutes).
  5. 5. Return the chicken to the pan, cooking for an additional 4-5 minutes until heated through and coated with sauce.
  6. 6. Garnish with lemon slices and parsley before serving.
