  • 34 garlic cloves
  • 4 cups vegetable or chicken stock (warm)
  • 2 cups pumpkin puree
  • 1 1/4 cup arborio rice
  • 1/2 cup freshly grated parmesan cheese
  • Fresh thyme or herbs of choice for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté sliced onions until golden brown, about 12-15 minutes. Reserve half for garnish.
  2. In a separate saucepan, warm the vegetable or chicken stock over medium-low heat. Stir in pumpkin puree until well combined.
  3. In the skillet with remaining onions, add pressed garlic and arborio rice; sauté for about 1 minute.
