  • 2 chicken breasts, cooked and sliced
  • 8 oz rigatoni pasta
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups baby spinach (optional)
  • Salt & pepper to taste
  • 1 tbsp olive oil

  1. Cook rigatoni in salted water until al dente; drain and set aside.
  2. Heat olive oil in a large skillet over medium heat; sear the chicken until golden brown on both sides. Remove from the skillet and slice.
  3. In the same skillet, sauté minced garlic and sun-dried tomatoes for 1-2 minutes until fragrant.
  4. Pour in heavy cream and simmer for 3-5 minutes until it thickens slightly.
  5. Stir in grated Parmesan cheese until smooth; season with salt and pepper.
  6. Add spinach if using; cook until wilted.
  7. Return sliced chicken and drained rigatoni to the skillet; toss gently to coat everything in the sauce.
