  • 1 large head of cauliflower
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: red pepper flakes
  • Optional: fresh parsley or chives for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper or lightly greased.
  2. Remove the outer leaves from the cauliflower head and trim the stem while keeping the core intact.
  3. Slice the cauliflower into thick 'steaks' about 1-inch thick.
  4. In a small bowl, whisk together olive oil, garlic powder, onion powder, smoked paprika, oregano, salt, black pepper (and red pepper flakes if desired).
  5. Brush both sides of the cauliflower steaks with the seasoning mixture.
  6. Bake for 20-25 minutes until golden brown and tender-crisp.
  7. For extra crispiness, switch to broil for the last few minutes of cooking.
  8. Let rest briefly before serving; garnish with fresh herbs if desired.
