  • 4 medium Sweet Potatoes
  • 3 tablespoons Olive oil (or avocado oil)
  • 2 tablespoons Corn starch (or Potato starch)
  • Kosher salt (to taste)
  • Ground black pepper (to taste)
  • Freshly chopped curly parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and grease two non-stick baking sheets.
  2. Scrub and rinse sweet potatoes, then cut them into wedges. Soak in cold water for at least an hour.
  3. Pat the wedges dry with a paper towel.
  4. In a ziplock bag, combine sweet potato wedges and corn starch; shake until evenly coated.
  5. Add olive oil to the bag and shake again until all wedges are coated.
  6. Spread the wedges on the baking sheets in a single layer and bake for 25-30 minutes, flipping halfway through.
  7. Let cool for 8-10 minutes before garnishing with salt, pepper, and parsley.
