  • 1 head broccoli, cut into florets
  • 2 tablespoons extra virgin olive oil
  • 1 cup shredded sharp Cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/3 cup panko bread crumbs
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 450°F and place a large rimmed sheet pan inside.
  2. Boil water in a large pot with 1 teaspoon salt. Prepare ice water in a bowl.
  3. Blanch broccoli florets in boiling water for 2 minutes; transfer to ice water for another 2 minutes.
  4. Drain and dry broccoli thoroughly on paper towels.
  5. In a large bowl, toss dried broccoli with olive oil, remaining salt, and black pepper.
  6. Spread the seasoned broccoli on the hot baking sheet and broil for 4 minutes.
  7. While broiling, mix melted butter, panko, Cheddar, Parmesan, and crushed red pepper flakes in another bowl.
  8. Remove broccoli from the oven, sprinkle with the breadcrumb mixture, and broil for an additional 3-5 minutes until crispy.
